Authentic Thai food doesn’t contain wheat or any wheat products. Thailand is one of the largest exporters of rice the world, and rice is generally served with all Thai foods.
Wheat is grown in the temperate climates of the mid-latitudes, whereas rice is generally grown in tropical and wet locations like Thailand.
In Thailand wheat is expensive and rice is cheap, so the locals generally do not eat wheat and it is not used in Thai food at all.
I live in Thailand, and I prefer eating wheat bread very much over rice. The Thai people do not like bread, in my experience, and generally only foreigners buy and eat it here.
